Lemon Myrtle Vodka Baked Salmon

TOTAL TIME: 1 Hour 20 minutes

SERVES: 8 servings

 

INGREDIENTS

3.5kg Fresh whole salmon

150ml TMD Lemon Myrtle Vodka

5 tbsp Raw Honey

2 Large lemon, sliced

1 Large lemon, zest

Few sprigs Thyme

1 tsp Sea salt

Extra virgin oil for serving

 

DIRECTIONS

Preheat oven to 180°C. Put the Lemon zest and juice, vodka and honey in a pan and bring to a gentle simmer. Reduce for 15 minutes until the liquid thickened to a glazing texture.

 

Place aluminium foil on top of baking sheet in a large roasting dish. Place salmon on foil. Sprinkle with salt and Brush the salmon all over with the glaze and place lemon slices and thyme sprigs in the cavity. Fold foil over fish and seal tightly. Bake for 30-40 minutes or until fish flakes easily with a fork. Remove from the oven and rest for 15 minutes. Squeeze Lemon juice over the top and drizzle with a little extra virgin olive oil before serving.
