Tamborine Mountain Distillery

Christmas Pudding with Festive Fruit
Cocktail Liqueur

TOTAL TIME: 1 Hour 10 minutes     |     SERVES: 8 servings

 


INGREDIENTS

250g Butter, softened
60ml TMD Festive Fruit Cocktail Liqueur
1 Orange, grated rind
1 ¼ cup Brown sugar
1 tbsp Golden syrup
1 tbsp Treacle
250g Dried mixed fruit
100g Mixed peel
60g Chopped almonds
1/2 cup Smooth apple sauce
1 1/2 cups Breadcrumbs
1 cup Flour
1tsp Ground mixed spice
Vanilla custard, to serve

 

DIRECTIONS

Combine dried fruits, mixed peel, almonds in a microwave-safe bowl and pour over the Brandy Liqueur. Microwave for 10/15 minutes. Let the fruit mixture cool down.

Cream butter and sugar in a large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the orange rind, golden syrup and treacle. Add fruit mixture, apple sauce, flour, breadcrumbs and mixed spice. Mix well.

Grease a microwave-safe pudding basin. Spoon mixture into basin. Microwave on medium for 40 minutes.

Allow to cool down for 10 minutes before removing from the basin. Serve with Vanilla custard.
